This article offers a way to evaluate a smoothie topping using portion costs and a small menu trial. It does not promise increased sales or profit.
Compare price and ingredient cost
Illustration: an 80 THB smoothie with 35 THB ingredient cost leaves 45 THB before labour, rent, tax and other expenses. This is not net profit.
Illustrative contribution before other expenses (not net profit)
Barley, Oat, Red Bean and Osmanthus Konjac cost 90 THB per pack; Moji Yogurt costs 120 THB. Each pack is 500g with 300g drained weight. At 15g drained per serving: 20 servings, costing 4.50 THB (90 THB pack) or 6.00 THB (Moji Yogurt), before shipping, tax and waste.
Illustration: 20 barley topping servings/day at a 20 THB upcharge and 4.50 THB portion cost leave 310.00 THB/day or 9,300.00 THB per 30 days before labour, tax, shipping, waste and other expenses. This is not observed customer performance or a sales guarantee.
What to evaluate in a topping trial
These pairings are serving suggestions, not tested recipes or measured customer results.
- Compare texture with your smoothie base
- The range includes barley, red bean and oat
- Barley and oat contain gluten. All five toppings are vegan and packed in syrup with sugar. Draining syrup can reduce sweetness but does not make them sugar-free. Not suitable for children under 6 because of choking risk.
- Record customer feedback on your proposed price
Pairing ideas to try
- Trial idea: barley with plain yogurt smoothie
- Trial idea: red bean with honey yogurt smoothie
- Trial idea: oat with banana smoothie
- Trial idea: oat popping boba with mango smoothie
- Trial idea: Osmanthus Konjac with vanilla smoothie; it is konjac, not popping boba
- Trial idea: Moji Yogurt with berry smoothie
You could start with barley and red bean, then record actual orders before choosing a permanent menu.
Three Ways to Add Popping Boba to Your Menu
Trial option 1 — Add-on: test a 10–30 THB surcharge against actual costs and customer response. This is a proposed range, not a market benchmark.
Trial option 2 — New menu item: include the topping in a smoothie and calculate its total cost before setting a price.
Trial option 3 — Bundle: test a two-smoothie offer with a topping included, accounting for its cost even if advertised as free.
What to Know Before You Start
- Unopened: store at room temperature for 12 months from manufacture. After opening: keep tightly closed and refrigerated at 4°C or below for up to 1 month.
- Plan purchases around the remaining shelf life
- Try adding the topping after blending
- Weigh the drained portion; do not infer grams from spoon size
Run a Two-Week Test Before You Commit
- Add popping boba as an optional extra for two weeks
- Observe: what percentage of customers choose it? Do they photograph it? Any comments?
- Calculate: compare topping revenue with portion cost, then account for all other expenses
- Decide: if the numbers work, make it a permanent fixture
Record actual topping orders and costs during your trial before deciding whether to keep the menu item. Results will depend on your shop; the examples here are not customer case studies.
